A-B-C Muffins!

Apples-Blueberries-Carrots all in a muffin!

My beautiful ninjas! This recipe is so very dear to me for more than one reason. There was a time that I disliked apples and carrots and now, sigh! I use them in most of my baking recipes! These muffins make for the most amazing breakfast either to go or to top it off with some yogurt and enjoy your morning! The blueberries on top add to the healthy quotient besides, who doesn’t love blueberries in their muffins! One bite of this and I was completely smitten and so was my husband! Apple and carrots added with a mix of cashews, walnuts and raisins give all the goodness to that essential meal of the day. Yes, I believe in a whole hearty breakfast to  jumpstart your day and get you all the energy you need. One muffin of this size with your cuppa tea/coffee and you are good to go! Husband enjoys it for
dinner sometimes with a heaping spoon of almond butter. If your kids are anything like I
was, these muffins are the best way to ensure that they get all the vitamins and minerals they need, first thing in the morning and keep them full and energized for hours. Hope y’all enjoy it!

Ingredients

1 apple ( I prefer honeycrisps)

2 cups of carrots

2 medium sized eggs

½ cup of blanched almond flour

¼ cup of coconut flour
……………………………………………………………………………………..
1 cup of milk ( i use unsweetened almond milk )

1 cup + ¼ cup rolled oats
……………………………………………………………………………………..
¼ cup coconut sugar

¼ cup raisins & ¼ cup of toasted walnuts

2 tbsp of cashews

2 tsp cinnamon

3 tsp baking soda

2 tsp vanilla extract

Instructions

Preheat oven to 350 and grease your muffin tin with coconut oil. Until the oven heats up,make sure the apple & carrots are finely chopped.

Place the walnuts in the oven with a timer of 7 minutes. Nuts can burn easy so keep an eye after 5 minutes.

Blend 1 cup of oats into flour like consistency.

Whisk together the oats flour, almond flour, coconut flour, cinnamon & sea salt.

In a separate bowl, beat the eggs, milk and vanilla extract.

Add the carrots and apple to this wet mix. Stir in the nuts (chopped). Add the flours to this along with baking soda.

I save some toasted walnuts to add to the top along with some blueberries.
