Chai Spice Blondies!!

Chai with masala and something to sweet to pair with?! WHO IS IN??!

Y’all, this by far is the best damn thing to have with your evening choice of beverage or with an espresso also if you’d like!
The aromas of cinnamon and nutmeg with the texture of something so moist and gooey is hands down the BEST kind of blondie to have! There’s something about winters and such gooey, aromatic and melt in your mouth kinda desserts that I or shall I say “we” can’t get enough of. Husband and I gobbled 2 of these as soon as I cut into them without the cream on top. The whipped cream could be flavored but because I had all these flavors in the blondie that I refrained from adding anything in the cream and kept it super simple.

Ingredients –

  • Oat Flour – 1 cup
  • Almond Butter – 2 tbsp
  • Cashew Butter – 1 tbsp
  • Flax egg – 3
  • Cinnamon – 3/4 tsp
  • Nutmeg – a pinch
  • Maple syrup – 1/2 cup
  • Coconut sugar/Brown sugar – 1/4 cup
  • Baking powder – 1.5 tsp
  • Whipped cream – Garnish purpose.

Directions –

  • Preheat the oven to 350 degrees.
  • Grease the baking dish with butter or oil.
  • Make the (3) flax eggs first by adding 3 tbsp water for every 1 tbsp of flax seeds (grounded). Keep the mix aside.
  • In a large bowl add in the nut butters and coconut sugar/brown sugar. Whisk in the sugar throughly.
  • To this mix, add in the oat flour and spices (cinnamon and nutmeg).
  • Now add in maple syrup and baking powder.
  • Mix the batter throughly using a spatula and making sure to scrap the sides of the bowl as well.
  • Pour the batter into the greased baking dish and bake for 25 minutes.
  • Once baked, let the blondies cool for atleast 30-40 minutes before cutting them into any shape you like.
  • Garnish with whipped cream on top and a small cinnamon stick to decorate with.
  • Enjoy with a warm cup of cappuccino or chai!!
