Overnight Oats with Raspberry Jam

This by far is the most requested recipes in my DMs and also the most simple and easy to make! You probably have all the ingredients already and I might do another post using other fruits/berries but raspberries are my favorite berries so of course this was coming first!
Summer has officially dawned upon us and what better than cold, rich and creamy overnight oats or dessert to wake up to?! Some days I wake up dreaming of this and so I make this in the morning, refrigerate it, run errands and have it for lunch.
I use almond milk and water but feel free to make it with dairy and they taste just as good. The chia seeds bring in almost like a pudding texture and the jam adds in the sweetness with just a hint of lemon.
I topped my share of oats with peanut butter because I like the mix of sweet and salt in this almost dessert like breakfast dish! You make this once and I promise it won’t be the last time!

Ingredients –

  • Oats – 1/4 cup
  • Chia seeds – 3 tbsp
  • Almond milk – 1 cup
  • Water – 1/4 cup
  • Vanilla essence – 1/2 tsp
  • Maple syrup – 4 tbsp
  • Lemon juice – 2 tbsp
  • Coconut sugar – 1 tbsp
  • Peanut butter/Cashew butter – 1 tbsp

Directions –

  • Begin with the jam on the stove so that while that’s cooling down you can assemble the oats.
  • For the jam, pick any fruit you like. I used a pack of organic raspberries and added it to a small saucepan along with water.
  • Once it starts to boil, add in the sugar, maple syrup and lemon juice.
  • Mash the fruit using a masher and depending on the consistency you like, let it reduce.
  • Once the desired consistency has been obtained, add in the chia seeds and remove from the stove. Let it cool for at least 15-17 minutes. Stir after 17 minutes and pour it into a small jar to refrigerate overnight.
  • For oats, add in oats, chia seeds, water and milk with vanilla essence. Mix everything in a glass and refrigerate.
  • In the morning, pour one layer of oats followed by a layer of the jam and top with peanut butter, seeds/nuts or just simple cinnamon powder and enjoy!
