Macadamia nut + Espresso + Chocolate brownies

Sure it is now January and we have a TON of chocolate and espresso brownies up on the internet and many many that will be made in the next few weeks, but i needed to share my ULTIMATE recipe before moving into all the spring savory treats !
These healthy homemade Espresso, macadamia brownies are insane. I made them one afternoon while it was pouring outside when i had an hour to spare and was craving some fudgy gooey chocolate burst melt into the mouth sort of treat! Most naturally, i turned to brownies because they are one of my favorite things to bake and eat and the aroma in the kitchen and living room is the best ever!
All made with super simple healthy no gluten ingredients and best when accompanied with some chai or coffee!

Ingredients :

  • Almond flour – 1.5 cups
  • Coconut flour – 1/4 cup
  • Maple syrup – 1/4 cup
  • Milk ( your choice, I use Almond milk) – 1/2 cup
  • Egg – 1
  • Macadamia nuts – 1/2 cup ( grinded) 
  • Espresso – small cup 
  • Dark chocolate – chopped -, i use Endangered species – half bar
  • Cacao powder – 1/4 cup
  • Olive oil – 1/2 cup
  • Vanila extract – 1 tbsp
  • Sea salt – 2 tsp
  • Baking powder – 2 tsp

Directions :

  • Preheat the oven to 355. In a large bowl, mix in the maple syrup, milk, egg, espresso and olive oil. 
  • In a separate bowl, sift in the flours, baking powder, cacao powder and salt. Finely chop the macadamia nuts. 
  • ​Fold in the dry mix into the wet. This will be a very thick mixture.
  • In a baking dish, place the parchment paper covering all sides. Layer the nuts first and then pour in the thick mixture. 
  • Bake for 20-25 minutes. Keep an eye after 20 minutes have passed or until a fork comes out clean. 
  • Let it cool for 20 minutes before slicing. Enjoy with a warm hot cocoa or milk.
  • Sprinkle with some more crushed nuts of your choice (peanuts, macadamia or hazelnuts)
