
Valentine’s Day is here! How could i have resisted making and posting this recipe today? You know when dishes come out of foraging the fridge BUT turn out so so delicious? This recipe came to life with whatever i had in the fridge AND i have been making all three layers individually, almost every other week? HA! The crust made of dates and walnuts topped with maple syrup to get the nutty and sweet flavor blend so well with the cashews and berries! It’s a match made in heaven!
P.S. – i made one of these as a sandwich with the crust on the top and bottom and PLEASE give that try, my husband had that ONE piece in 5 seconds!!

Ingredients –
- “Cheesecake” Layer
- Cashews – 3 cups
- Maple syrup – 4 tbsp
- Sea Salt – 1 tsp
- Lemon juice – 1 tsp
- Coconut milk (full fat) – 3 tbsp
- Crust
- Dates – 2 cups (pitted)
- Walnuts – ¼ cup
- Almonds – ¼ cup
- Chocolate chips – 2 tbsp
- Berries Layer
- Frozen Blueberries – ¼ cup
- Frozen Blackberries – ⅓ cup

Directions –
- This dessert has three layers of yumminess to it that would have you drool over each time you made them ! The first layer is that of the crust, then the cashew layer and then the layer of fruit.
- In order to get that creamy dense texture of the cheesecake, start with the cashew layer for it to be placed in the fridge.
- In a blender, add cashews, 2 tbsp of maple syrup, sea salt, lemon juice, and the coconut milk. Blend until it’s thick enough.
- Reserve ¼ cup in a separate bowl.
- Add blueberries first to the blender. Take ¼ cup to reserve.
- Add Blackberries to the blender that had the blueberries and cashew layer. Blend again. Place these in the fridge to cool.
- In a separate blender, add the dates (pitted), walnuts and almonds. Blend till it reaches a dough like consistency and remove in a bowl.
- Fold in the chocolate chips and its ready to go!
- Pour one tsp of avocado oil in palm. Take an ice cream scoop spoon and take one scoop out in your hand and roll it into a ball.
- Once the ball is formed, pres the ball down in whatever shape you like. I gave these balls a round shape, almost like a cup.
