
My MOST favorite meal of the day is breakfast, hands down. On most days, i wake up craving something specific and so it’s never been hard for me to think what i want to eat. Husband and i end up cleaning the entire pack in a week’s time. Bob’s Red Mill Pancake mix, gluten free makes pancakes and in this case, waffles so dang easy to make. Some days sweet and other days i have these with two eggs and some olives or sauteed mushrooms! (to follow soon on the blog) I used strawberries cause i had them in hand. Feel free to substitute any berries or pineapple. If using pineapple, i would suggest to pour in some pineapple essence, to enhance the flavor. I used banana essence in this one since spinach and kale have a smell that doesn’t go too well with the sweet waffles. Substitute vanilla essence if you don’t have banana essence.
The waffle maker which is also a panini maker was gifted by my brother and sister in law almost 2 years ago and we use this at least once a month without fail! I make a batch of 6-7 waffles and it lasts for good 3 days. Then follows pancakes for the next 3-4 days and out goes the empty packet!

Ingredients – WAFFLES
- Bob’s Read Mill Pancake mix – 4 cups
- Spinach – 1/2 cup
- Kale – 2 cups
- Milk – 2 cups
- Water – 1 cup
- Maple syrup – 1/2 cup
- Pistachios – 1/2 cup
- Banana essence – 2 tsp
- Baking soda – 1 tsp
Ingredients – Chocolate syrup
- Chocolate (dark) – 1/2 cup
- Milk – 4 tbsp

Directions – Waffles
- Preheat the waffle maker to 500 degrees.
- In a big bowl add in the pancake mix, finely chopped pistachios along with the baking soda and set aside.
- Using a chopper/blender, chop/blend the kale spinach with some water. We are looking for a runny consistency. Halfway through, add in the maple syrup to the spinach and kale mix.
- Pour the spinach and kale mix into the pancake mix. Using a spatula, mix it well.
- Pour the milk, banana essence and then the water and keep mixing until a smooth, slightly runny consistency is reached.
- Using an ice cream scoop spoon, scoop two scoops of the pancake batter and pour into the maker.
- I give it 4 – 5 minutes for that slightly golden brown color on the edges.
- If you like it more crispy, give it 6 minutes.

Directions – Chocolate sauce
- In a small bowl, mix the chocolate and milk and microwave for 40 seconds in two intervals.
- Mix it well and pour over the waffles
- Chop the strawberries roughly to add on top of the waffle stack.
- Serve hot with delicious hot cocoa or coffee!
