Date bites

This one ticks all of the above and many more!! Y’all this is so easy, so delicious and flavorful that I have made these probably every other night since I keep experimenting blending other flavors to it. I use these for dessert and use it to add sweetness to my smoothies and my overnight oats. All you need is a processor and a pack of dates with any nuts you like!
In fact, husband likes these with some tea on weekends and we pack some even when we go hiking.
I rolled them in a cup of finely chopped pistachios and coconut flakes for something extra!!

Ingredients –

  • Dates – 16
  • Almond butter/peanut butter – 1 tbsp
  • Chia seeds – 2 tbsp
  • Avocado oil – to grease your palm

Directions –

  • Line a baking tray with non stick parchment paper.
  • Place all the ingredients in a processor and blend it all. If you like it slightly chunky, do not pulse for more than a few seconds. If your prefer smooth, blend for a minute.
  • Grease your palms with oil and give them whatever shape you like.
  • Roll them into a mix of finely chopped pistachios or coconut flakes for a fancier look.
  • Place them into the fridge for at least an hour to set.
