
The best kind of combination EVER! As y’all know by now, i LOVE good brownies. I like them plain sometimes, sometimes with nuts and this time i made them with an insanely delicious layer of chocolate chip cookie dough on top! This one is TOO GOOd guys, you have to try them out to know why i have made them twice in a week already and i am eating another piece as i type this recipe out!!
I used oat flour but feel free to substitute almond flour and i know it tasted just as delicious with AF as made the first batch with that. I added walnuts to the brownie but pistachios or cranberries would be ideal too. Please note that the batter for the brownies and chocolate chip cookie would be a little thick so it settles in and does not over lap.
Something about brownies baking, all the good feels and best with coffee AND i added coffee to these just to give the brownie layer a kick that enhances the flavor of chocolate even more.

Ingredients –
- Brownies –
- Oat flour – 1 cup
- Cocoa powder (black) – 3 tbsp
- Eggs – 2
- Maple syrup – 3/4 cup
- Coffee – 1 tbsp
- Vanilla extract – 1 tsp
- Baking soda – 1 tsp
- Baking powder – 1 tsp
- Chocolate Chip Cookie Batter –
- Oat flour – 1 cup
- Egg – 1
- Maple syrup – 1/2 cup
- Vanilla extract – 2 tsp
- Baking soda – 1 tsp
- Chocolate chips – 1/2 cup

Directions –
- Preheat the oven to a 355 degree and line the baking tray with non stick parchment paper.
- Make the chocolate chip cookie batter first with the dry ingredients separate and the wet ingredients separate.
- Beat the egg, maple syrup and vanilla extract together for a good minute or two.
- Set aside and mix in the soda with the oat flour and set aside.
- In a separate bowl, whisk – eggs, maple syrup, vanilla extract and coffee for the brownie batter.
- Fold in the flour, cocoa powder, baking powder and baking soda into the wet ingredients.
- Place the batter on to the baking tray and with damp fingers or spatula spread it evenly.
- Fold in the chocolate chip cookie wet ingredients in to the dry.
- Pour it on the brownie batter. Remember the mix will be a little dry so again spread it with a damp spatula or fingers.
- Add in the chocolate chips.
- Bake at 355 for at least 23 minutes. Keep a check after 20 minutes.
- Insert a straw in between to make sure the batters are cooked throughly in the middle before taking the tray out.
- Let it cool on a rack for at least 30-40 minutes before slicing.
- Enjoy with your morning coffee or as a dessert in the evening!
