Eggless Chocolate Pancake!

HOW AND WHY did I never try Birch Benders ( Gluten free ) pancake mix before!
Firstly, it has all the right and clean ingredients and secondly I use no eggs for it! I right away put water, any nuts that I have readily available and protein powder and there I have the most heavenly taste in my mouth!! Since it has 5 gms of sugar, I do not add any sugar to it but who ever said NO to chocolate chips!!!?

I am no ambassador for them nor do I get paid but these really have been so easy to make and for all those who follow me on Instagram know that i make these once a week FOR SURE! and also it is hard to find good AND real food nowadays given all the hidden sugar and substances they put in packages labeling it “organic” and “healthy”.

Birch Benders has a variety of mixes suitable for all like Keto, Paleo etc etc but I definitely keep going back for the GF one since it has hazelnut meal in it which is SO darn delicious. You could add cranberries or white chocolate chips to it, lemon and poppy seeds or even blueberries!

I add protein powder even though it has almond flour for two reasons –
1) It makes the pancakes more fluffy
2) Protein is by far very filling and it reduces your level of the hunger hormone, Ghrelin.

Ingredients –

  • Birch Benders (GF) – 1 cup
  • Water – 3/4 cup
  • Protein powder ( optional ) – 1 tbsp. Protein powder gives it a good thickness and makes the pancakes fluffy, so if you are not adding protein, increase the quantity of cocoa powder to 3 tbsp.
  • Cocoa powder – 1 tbsp
  • Chocolate chips ( optional ) – 1/4 cup
  • Almonds ( optional ) – 1/3 cup
  • Oil – 1 tsp

Directions –

  • Heat the griddle or pan on a low – medium flame.
  • Get the batter going in a big bowl – Birch Benders mix, water, cocoa powder, chocolate chips and protein powder.
  • Set this aside for at least 2 minutes to thicken it.
  • With the help of an ice cream scoop, scoop out the batter.
  • Depending on the size of the pan/griddle, you can make 2 at the same time.
  • Keep an eye on the pancake until you see a few bubbles popping on top.
  • Flip the pancakes upside down and let it cook for not more than 1 minute on the other side.
  • This makes for 3 small ones or two medium sized.
  • Drizzle with melted chocolate or butter or even peanut butter and almonds!
